Summertime entertaining should be easy and fresh and fun. What is easier or fresher than fresh fruit skewers? And what is more fun than a pink flamingo? Or, at least, a pink flamingo tray.
I have recently become entranced by pink flamingos, in all forms. Everywhere I look I see pink flamingos.

And I fell in love with pink flamingos. Don’t know how. Don’t know why. Don’t really care. I’m fascinated by these ungainly birds. I even briefly considered a flock for my yard. Don’t worry I didn’t do anything rash, but I do have a few of the pink yard birds in my closet of Pretty Little Things. I know; it’s scary!
One of my dear friends knows of my obsession with all things flamingo and was kind enough to give me a beautiful flamingo tray.
It has been sitting on the map chest in my breakfast room just looking summery and taking it easy. This tray brings a smile to my face every time I see it.
Last week, however, I finally put it to work. I planned to attend a gathering of friends where we would each bring hors d’oeuvres. I racked my brain for something easy, light, and cool. The weather has been brutally hot here, too hot to eat. My poor, fried brain finally thought of fruit skewers. Now what could be easier?
I bought pre-cut fresh fruit at the grocery store and made up small skewers of the fruit. A garnish of mint leaves was all that was needed to dress the tray. It was colorful and easy entertaining at its best and all on my flamingo tray. The flamingo was a little surprise hidden beneath the fruit.
The mint was fragrant and the fruit was luscious and cool. I did not add a dip or drizzle, choosing to let the fruit flavors stand alone.
So there it is, my pink flamingo obsession and easy entertaining all rolled into one. Strange partners, indeed!
